WHO: Spring 2012 Culinary Management Senior Culinary Practicum class
WHAT: A benefit dinner for The Second Harvest Food Bank of Middle Tennessee. Following hors d’oeuvres, guests will enjoy a four-course dinner featuring a spring arugula and watermelon salad, dilled sous vide cod and scallop quenelles with mushroom faro risotto and asparagus, an entrée of braised rabbit in puff pastry with roasted fennel and currants, and a dessert of spring berry and citrus chiboust with olive and Sinclair salt & pepper chocolate twists. Cost of the dinner is $35 per person.
